In this three-day course you will explore the most up-to-date concepts and techniques, making this course essential for Head Baristas, Trainers and dedicated coffee professionals.
At this level, you can expect to explore the limits of your palate and current espresso technique. You will have the opportunity to spend time designing and evaluating brew recipes that are specific to the coffee, machinery and environment that you are in.
We will focus on how to create an espresso recipe, control the extraction and achieve a perfect TDS at all times. Milk chemistry will be another big topic and of course, latte art. We will also look at cafe design, workflow layout for your staff, and the essentials of cafe financial management. You will learn how to test the water, the effect on flavour and how to use different filtration methods to optimise your water to SCA Standards. We will discuss about different features of espresso machines and grinders that can make your life easy and bring consistency to any business.
Completing this course gives you all the information necessary to manage espresso quality across multiple sites or design the brand standards for a successful coffee business.
Prerequisite skills
Candidates entering this course should have completed SCA Barista Skills Intermediate level and, ideally, have experience as a working barista. If you are unsure about your level, please contact us to discuss it before you book.
